Chocolate (Avocado) Truffles

I have tried a few recipes with chocolate and avocado. Despite the promises of a match (I quote) "made in heaven", it has always ended up tasting pretty much like Nutella and salami. Made in heaven if you have been on a hunger strike for some time. That's why I found myself very surprised when I relunctantly took a bite of those ones. Even the boyfriend likes them (well I noticed he's been liking more and more healthy stuff ever  since he has been doing his "Insanity" program... maybe he's just happy to eat something?). They are not low carb/fat, but a handfull is perfect for a kick before a workout or to feed your body right after. Besides being an incredibly nutritious duo, dark chocolate and avocado are a great source of antioxydants, vitamins, and healthy fats. Those truffles are really creamy and super "chocolaty" so you can satisfy your sweet tooths with only two/three of them :)

Ingredients

  • 1 cup of dark chocolate - or different to taste
  • 1 ripe avocado
  • A few drops of vanilla extract
  • 1 tsp of coconut oil (optional)
  • Unsweetened dark chocolate powder separate                                                         … or grounded pistachios, almonds, coconut

Procedure

Slowly melt the chocolate in a double boiler (or microwave oven), add coconut oil, vanilla extract and mix with a spoon until homogeneous. In a blender, mix chocolate with avocado until you obtain a smooth texture. Place in the fridge for at least one hour. When the mixture is more solid, use a spoon and your hands to make small rolls that you can cover with chocolate powder or any of the suggestions above: they are all delicious & healthy!
